Processing of standard blocks, ideal for cutting plate freezer goods. DICECUT® 506

For cutting of frozen blocks of meat, poultry, or fish into exact dices and strips the DICECUT® models 502 and 506, three-dimensionally cutting frozen block cutters, are ideal. These machines cut the block-frozen raw material into cubes or strips with sizes between 10 and 60 mm (3/8” to 2 1⁄4”). The ideal core temperature of the blocks is between -6 °C and -18 °C (20° to 0°F), and is very dependent on the product and the selected cutting size. Because the raw material is always cut in a frozen stage, time-consuming tempering is not or less necessary, and the loss of meat juice, which can be between 2 - 6%, is minimized. This means significant time and material costs savings. Furthermore, should the cut product be subsequently cooled back down to -18 °C (0 °F), the necessary energy costs are significantly reduced since the product never reaches the dew point. Thus, the entire process is significantly accelerated, even with lower microbiological growth on the product, with significantly reduced production costs and higher yield.
